A beautiful white marble pastry board is the perfect addition to a chef's dream kitchen. Marble is prized for both its gorgeous look and ability to hold a cold temp, which is extremely useful when rolling pastry dough, hardening chocolate or just keeping cheese cool.
Our marble is harvested from real quarries and not made from artificial filler or composite materials. This leads to better thermal properties that help to retain cold (or hot) when using. Each board is pre-fitted with rubber feet that serve to prevent slipping and also make it easy to pick up the board.

The science of marble and bakingMany baking enthusiasts swear by marble, saying the material helps keep dough cool while they knead and shape it. They’re partially correct. Any surface is precisely the same temperature – room temperature – as its surroundings, but marble is one of those materials that feels cool to the human touch – at first. There are two reasons for this. No. 1: Unless they live in Death Valley, people (healthy ones, anyway) are warmer than room temperature, no matter what they touch. No. 2: Because marble is extremely dense, it conducts and dissipates heat very quickly. Marble takes a long time to heat up, but a short time to cool off. So, when a baker works on a marble surface, the stone absorbs and dissipates the relative warmth of the dough as it is kneaded, shaped and rolled. This conductivity effectively keeps the dough from warming up, which means the butter or shortening in the dough won’t melt. And that’s a good thing. |
What is marble?Marble is crystallized limestone that is mined in quarries. The stone has been subjected to intense heat or pressure that rearranges its molecular structure, a process known as metamorphism, resulting in a material that can be polished to a high sheen. White marble comes from very pure limestone, while the colors and swirls of other marble varieties are usually the result of various impurities such as sand, clay or silt in the limestone. |
